tracking variable changes over time and triggering if a value is past a threshold?

Hi!
I'm attempting to create a few flows and need some help on how I can achieve this.
I have a Xiaomi atmos sensor and I want to track the pressure changes over a period. If the pressure drops too much over the last hour, then trigger something.
I've only set a better logic number variable and then I'm stuck. I'm thinking of using a countdown app but how then do I track the difference from the initial pressure to the current pressure is greater than a preset amount.
Any pointers on how I can research this better?
