Is it possible to add explaining text in flows, so you can explain actions etc.

Good idea, but for what purpose? I guess you know yourself why/how you make your flow. In 2.0 with the new mobile app it will be possible to share flows with other Homey users so i guess some way of explaining will be implemented then

Good idea. I'm missing this also.

Sometimes I do add a card with a specific reason I don't know anymore after a while.
Adding comment wil help to remember
