Doesn't it get added to Insights only after the first time it receives data?

Just disable automatic updates. Then you won't automatically go to the next experimental firmware and when the next stable is released you can manually update to it.

That doesn't answer anything... Every Z-wave controller uses the same Zwave chip (300 or 500 series), so how come Domoticz can show that map?

Just read in the Fibaro app thread that you will need to remove and pair the Dimmers again to have it activated. Haven't tested it myself yet so don't know if it's really necessary. I do have the cards available for the flows.
